It’s no surprise that oats are my favorite breakfast of all time. Hot oats or oat bran during the cooler months and overnight oats for summer. I religiously eat overnight oats every morning once the weather stays warm but also because it’s the biggest time-saver in the morning! All prepped the night before and ready to eat when you wake up.

The addition of baobab powder makes these overnight oats extra super and nourishing. Baobab is the sub-Saharan African superfood (fruit) filled with a hefty amount of antioxidants and minerals. I use Bonga Foods organic, raw baobab superfood powder (learn more about them here). The baobab powder adds a slight tanginess to whatever you’re adding it to, plus added bonus of fiber, vitamin C, calcium and much more.
Breakfast is my favorite meal of the day and it makes it even more fun when you can get creative with your food. The toppings and flavor pairings for overnight oats are endless. These Superfood Overnight Oats are topped with banana, dried mulberries and sunflower butter. Chia seeds and baobab powder are soaked overnight with the oats using unsweetened almond milk. Remove from the refrigerator the next morning and enjoy!
