Happy Monday! It’s been a while since I shared anything with you – apologies, there are exciting things going on over here. If you follow me on Insta you may have heard that I’m moving to the big apple for a wonderful new job opportunity. I could not be any more thrilled and blessed. I am a huge advocate for following your dreams and doing what makes you happy, because life is too short to be anything but. So, I am currently packing up my things, apartment searching like a crazy lady, trying to sell my car and doing last minute errands. It’s a whirlwind of both crazy and relief
I have been eating some really amazing eats lately – there have been more convenient and random meals in the past few days but hey, as long as you make healthier choices and try to keep it balanced, a little convenience never hurt anybody, right? If you haven’t tried Cooking Light’s two-ingredient sweet potato pancakes, do yourselves a favor and get on that STAT. So easy, nutritious and satisfying – kept me full for hours! I topped mine with PB, fresh figs and blueberries.
