I hope everyone is enjoying their May so far. Has it been super rainy for you as it has been here in the northeast? I just keep telling myself that all of this rain will help the flowers bloom…but wasn’t that supposed to be April?! Also, hello allergies. This year has been pretty bad so far – anyone else agree?
Like the majority, I love Trader Joe’s. For those of you who feel the same way, I don’t need to say much more. The store is awesome in so many different ways. Although I will always have a special place in my heart for Whole Foods, my wallet doesn’t like it so much. TJ’s is much more affordable and for quality ingredients. The fresh produce on the other hand is not my favorite but pretty much everything else is a win.
I thought I would start sharing some of the quick and simple meals I whip up using TJ’s products/grocery items. And when I say simple, I mean it! Find below a couple of meals that were on repeat last week.
Overnight oats in a jar topped with these delicious freeze-dried blueberries. I love that there is no added sugar to these bluebs unlike most dried fruit you’ll find these days. But don’t get me wrong, I eat added sugar and never think twice about it, I just think fruit is delicious as is and doesn’t need sugar to enhance it. I’m a total overnight oats addict – I almost always eat it every morning on my early shift. I obviously love how convenient it is.
I jumped on the band wagon and joined the “Everything but the Bagel” seasoning blend cult following. Is it as good as everyone claims it is? Yes. I also feel like I needed a large amount of the stuff to really taste it though – maybe it depends what you put it on. I finally found the carrot spirals in the frozen section and sautéed some with sea salt and pepper then topped it with a homemade turkey burger that was seasoned with the everything blend. I added a generous dollop of original hummus and ended up adding more seasoning after I took the picture. Overall it was very tasty!
