On weekends, I try to switch up my breakfast routine from the typical bowls of oats or oat bran that I consume on a daily basis (hello burnout). Although, this Blueberry Ginger Breakfast Bake contains a hefty amount of rolled oats – I guess I just love the stuff! But it is definitely a nice change from the norm and it contains one of my favorite spices of all time (besides cinnamon): ginger.
As the first recipe of the new month (is it spring yet?!) I wanted to give you something sweet for breakfast that packs a big nutrition punch and because I always have breakfast on the brain. Did I mention March is also National Nutrition Month? If we haven’t done so already, this is the time that us RDs try and really encourage you to make healthy food choices along with establishing physical activity habits for a healthy lifestyle.
Now back to breakfast…I made sure to include ginger in this recipe because it adds the right touch of warmth and spice to your food. Ginger is a wonderful anti-inflammatory and antioxidant that can help alleviate arthritic pain and muscle soreness. It is also great for indigestion and nausea. I always carry ginger chews with me whenever I am traveling or if I want something sweet after dinner and to help with digestion.
Blueberries and ginger? Delicious. If you don’t already do so, I highly recommend keeping a stash of frozen wild blueberries in the freezer so you can enjoy them all year round. Perfect for smoothies, desserts, breads and muffins, like my Gluten Free Blueberry Bread.
This Blueberry Ginger Breakfast Bake is a comforting treat to wake up to on the weekend, not to mention it will make the whole house smell amazing!
