I adore matcha. Not only does it make for a great beverage, but a fun component to your baked goods as well. The trendy green tea powder is showing up in muffins, chia pudding, cake and my Matcha Chocolate Chip Pancakes.
I started drinking matcha tea as an alternative after I stopped drinking fully caffeinated coffee for a couple of different health reasons. I loved coffee, but my body didn’t enjoy the jittery energy crash that can sometimes come along with it. On the other hand, matcha gives me a great surge of steady energy without the shakiness.
What is matcha? Originating from Japan, matcha is a form of pure green tea that is ground into a powder, utilizing the entire tea leaf. In other ground tea, you would typically only steep the leaves and consume the water. With matcha, you are consuming the entire leaf. Matcha therefore contains more nutrients and other potential health benefits, including the antioxidant EGCG (epigallocatechin gallate). Because matcha is heavily concentrated with EGCG, it is said to provide about three times as many antioxidants than other green tea.
I used Midori Spring’s organic culinary grade matcha for these pancakes. I honestly love this matcha as I’ve noticed it doesn’t clump up when I’m making homemade hot matcha tea lattes. It also blends well for baking purposes, hence the name.
