This month’s Recipe Redux theme is all about “Start Smoking in the New Year”. And no, we do not mean that literally. We have been challenged to create healthier dishes using smoke and/or spiciness to kick things up a notch.
Dreaming up a dish doesn’t always come easily, but this time around I almost immediately knew what I was going for. Maybe it’s because I was craving some serious veggie action or the fact that I haven’t had beloved Brussels sprouts in what seems like a lifetime. Either way, I am totally in love with these Smoked Brussels Sprouts with Maple Cashew Cream.
Smoked sea salt was my
spice smoke of choice. I have never cooked with it before and I wanted to try it out, 2015 is all about trying new things and letting go of fears…even in the kitchen. Since I rarely add smokiness to my recipes, I knew I had to dive right in to this new-to-me flavor.
We’ve all seen roasted Brussels sprouts before (I could eat them everyday), but adding a touch of smoked sea salt brings out this incredible earthy taste in an unexpected yet good way. And trust when I say a little bit of this salt goes a long way.
What goes perfectly with roasted winter vegetables? Maple. I can not tell you how much I love pure maple syrup, it is my ultimate sweetener of choice . Did I mention that it contains a bunch of antioxidants? More reason to love the stuff. I finally made my first batch of cashew cream that seemed to be popping up all over the internet world. It is my new favorite obsession! It could not get any easier whipping up soaked cashews with some water, salt, and seasonings of choice. I could seriously eat spoonfuls of this creamy, silky cashew goodness.
