February may be coming to a close but that doesn’t mean the chocolate has to. Since you may have some leftover chocolate or a couple containers of cacao powder sitting in the pantry like I do, why not give chocolate a friend? This month, Recipe Redux is challenging us to show our favorite chocolate matches. Because chocolate + peanut butter may just be the best combination in the world (besides PB + banana), I had to make this Vegan Chocolate Peanut Butter Fudge!
What I really wanted to do was straight up roll some peanut butter in some melted chocolate, but seeing that it wasn’t the most creative or healthy idea, I suited for fudge instead
This fudge is both raw and vegan, meaning there is no cooking involved – score! This is also a no-fuss recipe as you pour all ingredients into a food processor and blend away. It could not be any easier.
Of course, this Vegan Chocolate Peanut Butter Fudge will not have the perfectly smooth and creamy consistency you may find in regular fudge, but I love the slightly crunchy and chewy texture it has from the peanuts and dates. This fudge is made with whole-food ingredients with minimal added sugar – only natural sweetness from dates and some pure maple syrup!
